Ingredients

Cupcake Base
3 cups All Purpose Flour
2 cups Refined Sugar
1 tsp Baking Soda
1 tsp Iodized Salt
1.5 cup Canola Oil
1 cup Evaporated Milk
3 pcs Large eggs
0.5 tbsp Apple Cider Vinegar
1 tsp Pure Vanilla Extract
2 tbsp Cocoa Powder
1 tbsp Red Food Coloring
Cream Cheese Frosting
1 cup Unsalted Butter
1 cup Cream Cheese
5 cups Powdered Sugar
0.25 cup Evaporated Milk
1 tsp Iodized Salt
2 tsp Pure Vanilla Extract

Cupcake Base

Pre-heat oven up to 300 °F.

Line cupcake pan with cupcake liners.

Combine all dry ingredients in a separate bow. Cake flour, sugar, baking soda, iodised salt and cocoa powder. Mix all together and set aside.

Start the mixer at low speed and add eggs one at a time.

Add the apple cider vinegar.

Add the dry ingredients alternating it with the evaporated milk.

Add the vanilla extract and red food coloring.

Mix until well combined.

Scoop the batter on to the cupcake pan. Use an ice cream scoop to make evenly sized cupcakes.

Cream Cheese Frosting

Cream together butter and cream cheese for about 2 minutes.

At low speed, add slowly 2 cups of powdered sugar until well incorporated.

Add alternately the milk and the rest of the powdered sugar.

Add the vanilla extract and salt.

Mix until well combined. Do NOT over mix.
