200g Bittersweet Chocolate Compound

I made Fortune Cookies as a cupcake topper for a job promotions party on tuesday. I got the recipe from the link provided yoyomax (http://www.youtube.com/watch?v=z0a3S5XNu88) and followed yoyomax’s tutorial; however, I made minor revisions on the recipe and baking procedure. 

First, I removed almond extract because I do not like the taste of almond extract, instead I doubled the amount of Vanilla Extract. Second, I don’t have vegetable oil in my kitchen so I replaced it with Canola Oil. Lastly, I increased the baking temperature from 300 degrees fahrenheit to 350 degrees fahrenheit and shorten the baking time from 10-15 minutes to 8-9 minutes.

Write fortunes on pieces of paper that are 3 1/2 inches long and 1/2 inch wide and fold them.

Preheat oven to 350 degrees Fahrenheit.

Grease a sheet tray with shortening.

In a medium bowl, lightly beat the egg white, vanilla extract and canola oil until soft peak, but not stiff.

Sift the flour, cornstarch, salt and sugar into a separate bowl. Stir the water into the flour mixture.

Add the flour into the egg white mixture and stir until you have a smooth batter. The batter should not be runny, but should drop easily off a wooden spoon.

Note: if you want to dye the fortune cookies, add the food coloring at this point, stirring it into the batter.

Scoop the batter using a tablespoon. Using a tablespoon will make the fortune cookie size even. Scoop cookie batter onto the cookie sheet, spacing them at least 3 inches apart. Gently tilt the baking sheet back and forth and from side to side so that each tablespoon of batter forms into a circle 4 inches in diameter.

Bake at until the outer 1/2-inch of each cookie turns golden brown and they are easy to remove from the baking sheet with a spatula (8 to 9 minutes).

Working quickly, remove the cookie with a spatula and flip it over in your hand. Place a fortune in the middle of a cookie. To form the fortune cookie shape, fold the cookie in half, then gently pull the edges downward over the rim of a glass, wooden spoon or the edge of a muffin tin. Place the finished cookie in the cup of the muffin tin so that it keeps its shape. Continue with the rest of the cookies.

Decorating Instructions

Melt the White Chocolate in a double boiler. Dip some of the fortune cookies.

Melt the Bittersweet Chocolate in double boiler. Dip the remaining fortune cookies.

Put some of the melted white chocolates in a piping bag.
Pipe twig shapes on top of the fortunes cookies dipped in bittersweet.

Dye the remaining melted white chocolate with the red icing color.
Pipe red dots onto the piped twigs to make it look like flowers. (see photos as reference)
Allow the decorated fortune cookies to set.
